
Important to understand the nuance of a snacking potato (which is a really well salted and seasoned baked potato + toppings). I make 3x at a time and will eat one for dinner (dressed with butter, sour cream, chopped spinach and Parmesan) and then grab another and eat it whole and cold for a quick and easy “walking lunch” during the week.
Little known fact: the salt you put on the skin seeps in after baking and makes for a grab and go situation thereafter (no butter / sour cream needed).
